Yummy Chicken Taco Salad
2 chicken breast filets
1 tbsp vegetable oil
½ c salsa
1 avocado, mashed
½ c mayo
½ tsp hot pepper sauce
3 c tortilla chips
3 c shredded lettuce
1 – 15oz can kidney beans, drained, rinsed
½ c chopped tomato
Shredded Cheddar cheese
Cut chicken into pieces. Stir fry in oil. Stir in salsa. Simmer, covered, for 5 minutes. Mix avocado, salad dressing and pepper sauce in bowl. Layer chips, lettuce, beans, chicken mixture, tomato, avocado mixture and cheese in salad bowl; toss to mix well. Serves 6.
