Veggie Rice Casserole
1 – 5oz package wild rice
1 large green bell pepper, chopped
1 lb fresh mushrooms, sliced
1 large onion, chopped
1 tbsp vegetable oil
1 – 16oz can tomatoes, drained, chopped
1 – 8oz can tomato sauce
10 oz Cheddar cheese, shredded
Preheat oven to 35oF. Cook rice using package directions, set aside. Sauté green pepper, mushrooms and onion in oil in skillet until tender. Stir in tomatoes and tomato sauce. Layer rice, vegetables and cheese ½ at a time in 9x13 inch casserole. Bake for 40 minutes. May be used as stuffing for green peppers. Serves 8.
