Tomatoes and Dumplings
1 ½ c flour
2 tsp baking powder
¾ tsp salt
3 tbsp shortening
¾ c milk
1 – 28 oz can tomatoes
Shredded Cheddar cheese
Combine flour, baking powder and salt in bowl; mix well. Cut in shortening until crumbly. Add milk; mix well. Bring un-drained tomatoes to a boil in saucepan. Drop dumplings by tbsp into tomatoes. Reduce heat. Cook, covered, for 15 minutes. Spoon into serving dish; top with cheese. Serves 6.
