Quick Sweet and Sour Chicken
1 can (15 1/4 oz.) pineapple chunks in juice
2 tbsp. cornstarch
1/2 c. dark corn syrup
1/4 c. vinegar
2 tbsp. soy sauce
2 tbsp. catsup
1 clove garlic, minced or 1/8 tsp. garlic powder
2 boneless whole chicken breasts (10-12 oz. each) skin removed, cut into 1" pieces
1/2 med. green pepper, cut into 1/2" pieces
2 green onions, sliced 1/4" thick
Drain pineapple juice into 2 quart casserole. Reserve pineapple chunks. Blend cornstarch and pineapple juice. Stir in corn syrup, vinegar, soy sauce, catsup and garlic. Stir in chicken. Cover. Microwave at high for 9-15 minutes, or until sauce is thickened and translucent and chicken is no longer pink, stirring twice.
Mix in pineapple chunks, green pepper and onions. Microwave at high for 2-4 minutes, or until heated through, stirring once. Serve over hot cooked rice. Serves 4-6.
