Quick Pepper Steak Recipe
1 flank steak (1-1/2 lbs.)
2 tbsp oil
dash pepper
1 ¼ c (10oz. can) beef broth
1/8 tsp. garlic powder
1/8 tsp. Thyme
1 large green pepper, cut into 1 inch pieces
1 tbsp flour
¼ c water
Cut steak across the grain into strips 1/2 inch wide. In a skillet, brown meat in oil on both sides. Add seasonings and broth. Cover; simmer 30 minutes until the meat is tender. Add green pepper and continue cooking 10 minutes until green pepper is crisp tender. Combine flour and water. Add to meat mixture and cook, stirring constantly until thickened.
