Quick and Easy Dinner Ideas
Hot German Potato Salad
6 med potatoes
6 slices bacon, cut into ½ inch pieces
½ c chopped onion
2 tsp sugar
2 tsp salt
1 tsp flour
1/8 tsp pepper
3 tbsp red-wine vinegar
Put unpeeled potatoes in enough water to cover and heat to boiling; reduce heat and cook for 25 minutes. Drain and then cool potatoes slightly. Peel and dice. Cook bacon until brown; drain on paper towels. Prepare dressing by spooning off all but 2 tbsp bacon fat from skillet and add onion and cook until tender. Stir in sugar, salt, flour, and pepper, cook 1 minute. Slowly add vinegar and ½ c water. Cook, stirring constantly until thickens and boils. Gently stir in potatoes and bacon until well covered with dressing; heat through. Serves 6
