Easy Fried Rice
2 tbsp butter
3 c cooked rice
1 ½ tbsp soy sauce
3 large eggs
1 tbsp water
¼ tsp sugar
¼ c sliced green onions
Microwave butter in 3 qt microwave safe casserole on high for 1 minute. Add rice and soy sauce; mix well. Beat eggs, water and sugar in bowl until blended. Pour into center of rice mixture. Microwave, covered, on medium for 3 minutes. Stir in green onions. Microwave, covered, for 3 minutes longer. Stir before serving. Serves 4.
