Crock Pot Roast Beef
This, along with just about any crock pot recipe, has saved my life several times over! Busy families ‘need’ slow cookers. I start this roast at around 10:00 am and it’s ready at 6pm. I’m a work at home mom, so that time works well for me. If you work away from home, you’ll be cooking yours for 10 hours on Low instead of 8 on Low. It’ll be fine. If I forget to start it at 10:00 am it still cooks great for 4 hours on High.
4-5 lbs boneless beef chuck roast or venison roast
1 can Cream of Mushroom soup
1 can French onion soup
Cornstarch for thickening
Place roast in crock pot and pour both cans of soup on top of roast. Put the top on the crock pot and cook on low for 8 hours or high for 4 hours. When done, take meat out of crock pot and pour the meat juice in a small pan, bring to a boil and thicken with cornstarch. This is delicious with mashed potatoes and gravy or noodles.
