Quick and Easy Dinner Ideas
Beef and Veggie Stir Fry
8 oz sirloin steak
1 10 oz can beef broth
1 tbsp cornstarch
1 tbsp soy sauce
2 tbsp vegetable oil
1 clove garlic, minced
1 tbsp vegetable oil
4 green onions, cut into 1 inch pieces
1 c chopped broccoli
1 can water chestnuts, 7 oz size can, drained
Cooked rice
Cut steak into thin slices. Mix broth, cornstarch and soy sauce in small bowl; set aside. Heat 2 tbsp oil in skillet or wok over medium-high heat. Add beef and garlic. Stir-fry until light brown. Remove to bowl. Add remaining 1 tbsp oil, green onions and broccoli to skillet. Stir-fry for 1 minute. Add water chestnuts and fry for 30 seconds more. Return beef to skillet and then stir in cornstarch mixture, cooking for 1 minutes or until thickened. Serve over rice. Serves 2.
