Easy Beef and Potato Bake
My kids have all been big potato fans. In fact, when they went through their picky eater phases, one is still in his, potatoes were about the only food that I could count on them eating without fussing. This recipe is a real family favorite. Add a nice green vegetable side and you’re set.
4 c frozen hash browns
3 tbsp vegetable oil
½ tsp pepper
1 lb ground beef
1 envelope gravy mix
1 c water
1 tsp garlic salt
1 – 10 oz bag frozen mixed veggies
1 c shredded cheddar cheese
1 – 3 oz can French fried onions
Preheat oven to 400 F. Combine potatoes, oil and pepper in a 9x12 inch baking dish and mix well. Press over bottom of dish to make a shell and bake for 15 minutes. Brown ground beef in skillet, stirring until crumbly and drain. Stir in next 3 ingredients. Bring to a boil. Add mixed veggies and mix well. Cook on low for 5 minutes. Stir in half the cheese and half the onions. Spoon into potato shell. Reduce oven temp to 350 F and bake for 15 minutes. Top with remaining cheese and onions and bake 5 minutes longer. Serves 4.
